INGREDIENTS
4 one oz sized pieces of Cod (or any mild tasting white fish)
3-4 cloves of fresh garlic
2 TBS of Coconut Oil, Refined so no coconut taste
2 medium sized vine ripe tomatoes
1/2 large lemon
PREPARATION
heat your sauce pan (I used a 9″ pan, Calphalon) on medium heat
add 2 TBS of Coconut Oil and let melt
slice cloves of garlic and add to pan
cut tomatoes into 1/2″ size pieces (leave peeling) and add to pan
cook on medium heat covered for about 7 minutes, stirring 2-3 times
add the one oz size pieces of Cod
squeeze the lemon over the Cod and over,
cook on medium for 6-7 minutes, stirring 1-2 times
cook on medium for 6-7 minutes, stirring 1-2 times
use knife or fork to flake the Cod
Serve over a bed of mixed greens or in a dish as the entree with a salad to the side
